Slaving away at a stove top is no way to spend a summer’s night in the kitchen. However, spending about 10 minutes of preparation chopping vegetables and then popping them into the oven is totally doable if you ask me. Summer crops yield a ton of rich vegetables perfect for roasting in bulk. The basis of this side dish is squash and broccoli, which both pack a ton of good-for-you nutrients and vitamins. Broccoli contains substantial values of vitamins A, C, folic acid, fiber and calcium. It also helps to regulate blood pressure, reduce cholesterol, and has cancer fighting qualities. Squash, now at the peak of its season, contains excellent antioxidants and anti-inflammatory agents. Additionally, it contains vitamin A and C, magnesium, fiber, folate, riboflavin, phosphorus, potassium and vitamin B6.

Definitely try to pick up the summer squash and broccoli from your local farmer’s market since they are both in season and should be readily available. The additions are as simple as it gets! In fact, you probably have the rest of the ingredients in your pantry on a regular basis. This side dish doesn’t get much easier. Not to mention, you’ll find yourself snacking on the entire baking sheet because it’s so darn delicious!

1 pound broccoli, rinsed and trimmed

1 medium to large green sliced summer squash
½ cup olive oil
Season with garlic powder
Season with kosher salt
Season with ground black pepper
¾ cup Panko bread crumbs

Serves 2-4 people.

Preheat oven to 425 degrees F.

Cut the broccoli florets into bite size pieces. Cut the summer squash into thin slices. Place the broccoli and squash into a  large mixing bowl and toss with the olive oil, garlic, kosher salt and pepper. Measure and add the Panko bread crumbs to the mixture {option: toasting the bread crumbs in the oven prior to adding into the mix}.

Spread broccoli/summer squash mixture onto a baking sheet covered with aluminum foil. Place into the oven and roast until broccoli and squash are tender and a little browned at the edges. Remove from the oven, let cool and serve immediately.
