Fourth of July festivities typically include some sort of BBQ teeming with unhealthy food choices. And while I’m all about the occasional BBQ smoked rib, coleslaw and potato salad (not to mention, s’mores?!), why not preemptively take the time to prepare a fresh fruit salad with a patriotic red, white and blue theme?

Summer is officially here, which means a ton of healthy fruits and vegetables are ‘in season’. Why is it important to buy organic food ‘in season’? Typically, when you buy fruits and vegetables that are not in season they have to be brought to you across long distances, if not from across the globe. Additionally, most of these items are picked while still immature, to ensure they don’t spoil along the way.  Not only does this affect the fresh taste and aroma of your fruits and vegetables, it causes vitamin degradation and nutrient loss.

All sorts of berries, including strawberries, blueberries, and blackberries, thrive during the month July. Since these are the base of this salad, you are proactively supporting agriculture that increases the health of our soil. Additionally, since you are purchasing these items ‘in season’ you are reducing the amount of artificial chemical treatments you expose you and your family to.

This salad is great when prepared right before the main event. Chopping and preparation time is only about 10 minutes. Make sure you add the bananas, almonds and mint leaves right before serving. You want your bananas to stay white, your almonds to stay crisp and your mint leaves not to go soggy. I also prepared an optional Greek yogurt dip for those who crave something a little sweeter. You can top the salad with the dip or allow guests to dip their own fruit. Recipe serves 2-4 people.


5-8 large chopped strawberries

¾ cup of blueberries

¾ cup of blackberries

½ cup of chopped jicama

Mix all ingredients in large serving bowl.

Right before serving, top with:

1 whole sliced large banana

½ cup sliced roasted almonds

mint leaves for taste

{optional} Greek Yogurt Dip:

8 ounces plain Greek yogurt

1 tablespoon honey

2 teaspoons lemon juice

1 teaspoon vanilla extract

Mix everything together in a bowl and refrigerate.
