Now that we’re knee-deep in the holiday festivities, you’ve probably had at least one holiday party meltdown (Did I just eat 15 mini-quiches? How did that happen?) But don’t lose hope! At your next holiday party, you’ll have these tiny little bites of dairy and gluten-free heaven with you. Three of these little fellas will satiate you, satisfy your sweet tooth, and allow you to say those seven magic words: No thanks. No more quiche for me.
NuttZo Cookie Bites
Makes about 36-40 cookie bites
20 Medjool Dates, pitted
1/4 cup Avocado, mashed
1/3 cup Crunchy NuttZo Original (or any other nut butter)
1/4 cup Coconut Flour
Directions : Place dates in a bowl covered with water for 1-2 hours to make it easier to mash. Preheat oven to 350 degrees and prepare a cookie sheet with nonstick cooking spray, parchment paper, or silicone mat. In a large bowl, add dates and avocado. Using an immersion blender, process until a smooth and creamy mixture develops. (You could also use a food processor or blender) Add NuttZo or nut butter and coconut flour and process until everything is well combined. Using a half-tablespoon measuring spoon, scoop batter out onto prepared cookie sheet. Use a spoon to flatten the cookie to your desired thickness. Bake for 10-12 minutes until the edges are just browned.
