These bars are a great “make-ahead” snack idea full of healthy fats and slow-releasing carbs that is guaranteed to keep you fueled for any workout or mid-afternoon snack craving.
3 ripe bananas
2 cups muesli
1 teaspoon baking soda
1/2 cup milk
2 tablespoons honey
2 tablespoons cinnamon
2 tablespoons nut butter (optional)
1 cup shredded coconut
1/2 cup chopped walnuts or pecans
1/2 cup sunflower seeds

Yields 12-16 bars
Place the bananas in a large mixing bowl and mash with a wooden spoon. Stir in half of the muesli, adding small amounts at a time. Next add the two eggs, beaten, to the mixture.
In a separate small bowl, mix together milk and baking soda, then microwave for 10-15 seconds. Pour this into the large bowl and mix. Finally, add the remaining muesli and stir thoroughly.
Scoop in honey and nut butter, as the final wet ingredients to the mixture. Continue stirring while adding coconut, cinnamon and walnuts. Sprinkle half of the sunflower seeds into the mixture, and save the other half for the topcoat before baking.
Line a square or rectangular shaped baking pan with foil. Spread the mixture evenly so it is approximately 1-2 inches in height.
Sprinkle remaining sunflower seeds on top, then place in the oven! (If you would like to add any additional nuts or coconut, you can sprinkle them on top as well).
The bars will look crispy and browned on top when they are done, so keep an eye on the mixture as they are baking. When you take them out, let them cool for 20 minutes before placing the pan in the fridge.
One to two hours later, remove pan from fridge and cut the sheet into pieces. Wrap individually with clear film and store either in the fridge or in a Tupperware container.
